Black Beans
1 onion, chopped
10 cloves garlic, minced
1 tbsp cumin powder
1 tsp coriander seeds, toasted & ground
1 tsp dried oregano
1 tbsp smoked paprika
½ tsp red pepper flakes
½ cup tomato paste
2 bay leaves
1 lb dry black beans, washed
1 qt broth/stock
0-1 cup water
½ tsp salt
Sauté onion until softened.
Add garlic, spices, tomato paste, and bay leaves, stirring, just until fragrant.
Add beans, broth, water, and salt, taking off heat.
Pressure cook 25-30 minutes / using “beans” button.
Allow natural pressure release, at least 20 minutes, before opening lid.
